Bopis Recipe – Innards are something that not everyone is a fan of, but there are plenty of Filipino dishes that feature them. One of the most popular Filipino dishes that feature innard is Isaw. Other dishes that feature unorthodox parts of the animals you can eat include Papaitan and Dinakdakan. If you want to start small, like trying liver, you should check out Igado. However, there is one dish that features animal lungs, and that is Bopis. 

Bopis is a spicy Filipino delicacy prepared with minced pork lung and heart cooked in a flavorful blend of onions, garlic, and chili peppers. Often served as an appetizer or a main meal, it boasts regional variations across the Philippines, featuring ingredients like tomato sauce, paprika, radish, carrots, bell peppers, and vinegar depending on the locality. One variation that stands out from the rest is the version from Kapampanga. 

The Kapampangan version of bopis is typically drier, and the minced pork lung can be easily found in wet markets, known as “pang-bopis” cut. The dish gets its name “pulutok” in Kapampangan due to the crackling sound the meat makes while sautéing. If you want to try the general version of the dish, you should try this Bopis Recipe:

Ingredients
  

  • 2 pounds minced pork lungs if you can't find pork lungs, you can use pork hearts instead and finely chop them up.
  • ½ cup vinegar
  • 1 teaspoon salt
  • 2 tablespoons canola oil
  • 1 onion peeled and chopped
  • 4 cloves garlic peeled and minced
  • 1 tablespoon fish sauce
  • 1 large carrot peeled and diced
  • ½ green bell pepper seeded and chopped
  • ½ red bell pepper seeded and chopped
  • 4 Thai chili peppers stemmed and chopped

  • Let’s get started! In a bowl, mix together the minced pork lung (or pork heart), vinegar, and salt. Allow it to marinate for about 10 minutes – this will infuse those fantastic flavors!
  • Grab a wide skillet, put it on medium heat, and add the canola oil. Once it’s heated up, toss in the chopped onions and minced garlic. Saute them until they’re nice and softened.
  • Now, add the fish sauce for that extra kick of flavor.
  • Time to add the marinated minced pork lungs (or hearts). Let it all come to a boil, and then cook it, stirring occasionally, for about 20 to 30 minutes. You’ll know it’s ready when most of the liquid is absorbed, and the meat starts to sizzle – yum!
  • Next up, let's add the diced carrots, chopped green and red bell peppers, and those spicy Thai chili peppers.
  • Cook for about 2 to 3 minutes until the veggies are tender-crisp – we want that perfect texture!

Notes

If you’re in the U.S. and can’t find pork lungs due to regulations, don’t fret! You can easily use pork hearts as a substitute – just finely chop them up with a knife or pulse them in a food processor.

What Else to Know About a Bopis Recipe

There are no certain origins behind the dish. However, there is plenty of ways to enjoy the dish. To serve and store bopis, you can enjoy it either as an appetizer paired with your preferred hard drinks or as a main dish alongside steamed rice. For leftovers, simply refrigerate them in a container with a tight-fitting lid, and they’ll stay fresh for up to 3 days. When you’re ready to indulge again, just reheat the bopis in a wide pan, making sure to stir regularly until it’s heated through and ready to be savored once more.
