Papaitan Recipe – Papaitan refers to a famous soup dish from Ilocos. It is composed of cow or goat innards and it’s name is derived from the Filipino word “Pait”, which means “bitter”. The bitter taste of this soup comes from the bile. The bile in this dish refers to the bitter juice extracted by the liver and stored in the gallbladder to aid digestion.

Papaitan is one out of many Filipino dishes that features innards as the protein. Not a fan of soup? Don’t worry, there’s many other dishes that feature animal innards. If you want something on the simple side, you should try “Isaw.” The simplest way to describe this dish would be barbeque animal intestines. Like many Filipino dishes, there are different ways to enjoy this dish and variations that go with it. Some variations of “Isaw” include a deep fried version called “Crispy Bagbagis” and a creamy stew version called “Dinakdakan.”

Ingredients
  

  • 1/2 lb ox tripe
  • 1/2 lb cow’s small intestine
  • 1/2 lb beef thinly sliced and chopped
  • 1/2 lb cow’s heart
  • 2 tbsp bile
  • 2 thumbs ginger julienned
  • 1 piece onion diced
  • 6 cloves garlic crushed and chopped
  • 8 cups water
  • 4 to 6 pieces finger chilies
  • 2 1/2 tablespoons salt
  • 1/2 tablespoon ground black pepper
  • 1 to 2 pieces lemon or 5 to 8 pieces calamansi
  • 2 tablespoons cooking oil

Instructions
 

  • Boil 4 cups of water with a tablespoon of salt in a cooking pot.
  • Then, add in the ox tripe and small intestines, and let it simmer for 35 to 50 minutes until it’s tender. Once it’s done, remove the meat and slice it up. Don’t forget to discard the water!
  • Heat up a clean cooking pot and pour in some cooking oil. Once it’s hot enough, add the garlic, onion, and ginger to sauté. Then, add the beef, heart, sliced intestines, and tripe and cook for 3 to 4 minutes.
  • Add salt and ground black pepper, give it a good stir, and pour in the remaining 4 cups of water.
  • Bring it to a boil and let it simmer for 40 minutes (you can add more water if needed).
  • Add in the bile and let it simmer for another 5 minutes. Finally, throw in some finger chilies, squeeze in some lemon juice, and let it simmer for 3 more minutes.
  • Turn off the heat and transfer it to a serving bowl. Serve it hot
