To start, grab a 13 x 9 baking dish and brush the bottom and sides with some coconut oil or melted butter.
In a large pot, combine some coconut milk, evaporated milk, condensed milk, and sugar. Bring it to a gentle boil, stirring regularly until the sugar dissolves. Next, add in 2 cups of fruit cocktail and stir it all together, letting it cook for about 1 to 2 minutes.
Now, in a small bowl, mix some water and cornstarch until the cornstarch is dissolved. Gently add it into the milk mixture, whisking vigorously to prevent any lumps from forming. Keep whisking and cooking until the mixture thickens to a nice, smooth paste.
Transfer the mixture into the prepared dish, using a lightly oiled spatula or knife to smooth out the top. While it's still warm, let's add a little extra fruity goodness. Sprinkle the remaining 1/2 cup of fruit cocktail on top, making it look as pretty as it tastes.
After letting it cool slightly, cover and pop it in the fridge for about 1 to 2 hours, or until it's completely cooled and set. And now for the finishing touch - sprinkle some shredded cheese on top!
