If you purchased a frozen ham, let it thaw before removing any netting or plastic on it. It should be easier to work with when it is close to room temperature.
Craft a bouquet garni by tying together different fresh herbs and leek then tie it onto your ham using a meat thread.
Place the ham tied with the bouquet garni into a saucepan along with bay leaves and peppercorn then pour as much water to soak the meat and herbs and spices.
Bring the water to a boil before turning down the heat and letting the meat simmer for approx. 35-40 minutes.
Once the meat has been simmered, take the pan away from the heat and let the meat rest in the hot brine. Make sure to cover the meat and let it rest for approx. 20 minutes.
Take the meat off the pan and transfer it onto a plate. Let the ham rest for another 5 minutes without covering it.
Slice the ham and serve it with your choice of vegetables. You can use the brine as a sauce.
