Ube Brownies

A different take on classic brownies where ube is used instead of chocolate as the main star

Ingredients
  

  • 1 1/4 cups All Purpose Flour
  • 1/2 teaspoon Baking Powder
  • 1/4 teaspoon salt
  • 1/2 cup melted unsalted butter
  • 3/4 cups light brown sugar set aside 2 tablespoons of light brown sugar
  • 1 large egg room temperature
  • 2 teaspoons ube extract/flavoring

Instructions
 

  • Pre-heat your oven to 350 degrees
  • Lightly grease 11x7 inch baking pan then line it with parchment paper
  • Sift dry ingredients together in one bowl and mix them with a whisk or spatula
  • Add sugar and melted butter in a seperate bowl and mix them well with a whisk until it thickens and lightens in color
  • Once the sugar and butter is incorporated, add egg and ube extract to the bowl and mix them all together until the mixture is smooth and drips evenly from the whisk.
  • After reaching a smooth consistency, switch the whisk for a spatula and gradually fold the dry ingredients into the mixture until no traces of the powders are visible.
  • Transfer mixture to baking pan and spread the mixture evenly with a spatula
  • Bake for 16 to 18 minutes or until you get a clean result from your toothpick or tester
  • If you want to have a more fudgy result, bake the mixture for 14-15 minutes. You should have a few crumbs when testing the mixture.
  • Let the pans cool before cutting even squares and serving.

Notes

If you don't have an 11x7 inch baking pan, you have the option to use another sized baking pan but you will need to adjust your baking time accordingly, especially if the pan is deep in depth.
