Ingredients

  • 1 cup flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 egg
  • 1 cup cold milk
  • 2 tablespoons butter melted
  • canola oil
  • 6 ripe but firm saba bananas peeled and sliced lengthwise into about 1/4 inch-thick

Instructions

  • irst, grab some saba bananas and peel them. Then slice them into 1/4-inch-thick strips lengthwise.
  • Next, sift flour, 1/4 cup of sugar, baking powder, and salt into a bowl.
  • In another bowl, beat an egg. Add milk and butter to the egg mix and whisk everything together until they are blended.
  • Now, add the flour mixture to the milk mixture and stir until just moistened. Be careful not to overmix the batter.
  • In a pan over medium heat, heat up some oil. Dip the banana slices into the batter, fully coating them, and gently slide them into the hot oil.
  • Cook for about 1 to 2 minutes on each side or until they're golden and crisp.
  • Remove the maruya from the pan and drain on paper towels.
  • Finally, using a fine-mesh sieve, dust the maruya with the remaining sugar. Serve warm and enjoy!

Notes

Cook each fritter for 1 to 2 minutes on each side. Wait until you see bubbles forming on the top and the bottom turns golden brown before carefully flipping it over to cook the other side until it's browned. If you want to level up the taste, you can combine ground cinnamon with the sugar you're using to coat the fritters.
