Ingredients
  

  • 2 egg whites
  • ½ cup sugar super fine is good
  • ¼ cup all-purpose flour
  • teaspoon baking powder
  • ¼ teaspoon vanilla essence

Instructions
 

  • Preheat your oven to 300°F and line a baking sheet with a silicone mat or parchment paper.
  • In a small bowl, sift together the flour and baking powder; set aside.
  • Place the egg whites in a stand mixer and whip on high until they form stiff peaks.
  • Slowly add in the sugar while continuing to mix until the sugar fully dissolves into the egg whites. To check, take a bit between your fingers; it should be smooth, not gritty. This step usually takes about 1-2 minutes.
  • Remove the bowl from the stand mixer and gently fold in the flour mixture until fully incorporated. Stir slowly to maintain the integrity of the stiff egg whites.
  • Transfer the Pacenica Cookie mixture into a piping bag and pipe 1-inch disks onto the lined baking tray.
  • Bake for 10 minutes, then rotate the baking trays and bake for an additional 10 minutes.
  • Allow the cookies to cool on the baking tray before transferring them to a serving tray.
