Pancit Buko
Filipino stir-fried noodles that use young coconut as the noodle and features meat, prawns, and vegetables.

- 3/4 cups young coconut meat or buko grated
- 1 large chicken breast boiled and flaked
- 1/4 kilo shrimps shelled
- 1 large onion sliced
- 4 cloves garlic minced
- 1 carrot sliced into thin strips
- 10 pcs. string beans sliced 1 inch long diagonally
- 1 cup cabbage shredded
- 1 tsp. MSG
- 1 1/2 cups chicken broth
- 2 tbsp. patis or fish sauce
- 1 pinch salt or to taste
- 1 pinch pepper or to taste
- 2 tbsp. chopped kinchay or Chinese celery
- 2 tbsp. cooking oil
Heat up the oil in a pan then saute the garlic and add the onion.
Once the garlic and onions are cooked, stir in the shrimp and chicken and season it with the patis/fish sauce.
Simmer the ingredients for 10 minutes then add the vegetables.
When the vegetables are almost done cooking, get 1 cup and set it aside for topping.
Add the grated buko into the pan and cook it for 5 minutes. Make sure to stir to prevent the ingredients from sticking to the pan.
Transfer the mixture to a plate and spread the set-aside vegetables on top.
If you want to add a sauce, you can use either patis or calamansi juice.
