Pancit Buko Recipe – Noodle dishes are something you will find no shortage of in Filipino cuisine. From thick noodle dishes to rice noodle dishes, there are a variety of options to choose from. However, have you ever heard of a noodle dish featuring coconut as the noodles? Pancit Buko is exactly that. It is a type of Filipino noodle dish featuring noodles made from very thin strips of young coconut meat with various spices, vegetables, and meat or seafood. While it is technically not noodles, it still falls under the noodle category given how it’s made and enjoyed. Pancit Buko

Filipino stir-fried noodles that use young coconut as the noodle and features meat, prawns, and vegetables.

Ingredients
  

  • 3/4 cups young coconut meat or buko grated
  • 1 large chicken breast boiled and flaked
  • 1/4 kilo shrimps shelled
  • 1 large onion sliced
  • 4 cloves garlic minced
  • 1 carrot sliced into thin strips
  • 10 pcs. string beans sliced 1 inch long diagonally
  • 1 cup cabbage shredded
  • 1 tsp. MSG
  • 1 1/2 cups chicken broth
  • 2 tbsp. patis or fish sauce
  • 1 pinch salt or to taste
  • 1 pinch pepper or to taste
  • 2 tbsp. chopped kinchay or Chinese celery
  • 2 tbsp. cooking oil

Instructions
 

  • Heat up the oil in a pan then saute the garlic and add the onion.
  • Once the garlic and onions are cooked, stir in the shrimp and chicken and season it with the patis/fish sauce.
  • Simmer the ingredients for 10 minutes then add the vegetables.
  • When the vegetables are almost done cooking, get 1 cup and set it aside for topping.
  • Add the grated buko into the pan and cook it for 5 minutes. Make sure to stir to prevent the ingredients from sticking to the pan.
  • Transfer the mixture to a plate and spread the set-aside vegetables on top.
  • If you want to add a sauce, you can use either patis or calamansi juice.

Variations of a Pancit Buko Recipe

Pancit buko is a fairly easy recipe to make, but there is more than one way to enjoy it. One option you can try is checking out the broth variation of the dish. With the above recipe, there is one more way to make the stir fry dish unique and that is by cooking the ingredients with latik (coconut syrup) and coconut oil derived from coconut cream.

Aside from this, the dish is commonly served directly on an opened coconut shell. Depending on the region, it can also include wheat noodles in the mix. If you are someone who enjoys coconut or healthy alternatives, then this is a recipe for you.
