Other Notes on a Cassava Cake
Cassava Cake falls under the Filipino dessert category known as bibingka. This category refers to traditional baked cakes such as Taisan, a Filipino chiffon cake with cheese on top. When it comes to making cassava cake, you can end up with different textures depending on the amount of grated cassava used. If you want a softer and moist cake, you’ll want to use lesser cassava. Should you add more cassava content, you get a firmer and chewier result. Aside from different textures, you can try out different toppings, such as grated coconut.
