Filipino Intestines Barbeque Recipe – Several cuisines have shown that various parts of an animal can be delicious in different ways. In Filipino cuisine, plenty of dishes use almost all of the animal’s parts, especially the innards. Not everyone is a fan of having innards in a meal, but there are several ways to cook and enjoy them. One of the more popular ways to enjoy innards, especially chicken innards in Filipino cuisine is with Isaw.
What is Isaw? Isaw is basically a type of barbeque featuring chicken innards. It is one of many types of Filipino street food and can involve either pig or chicken intestines. The process of making this dish involves cleaning the intestines, turning them inside out, then boiling or grilling them. One way you can make this dish at home is with the following Filipino Intestines Barbeque Recipe:
Isaw
Ingredients
- 1 lb chicken or pig´s large intestine 450g and well cleaned
- ½ cup vinegar 120 ml
- 2 tbsp whole peppercorn
- 2 tbsp salt
- 4-6 pieces dried bay leaves
- 4 cups water 960 ml
- ½ cup UFC banana ketchup 115g
- 3 tbsp soy sauce
- 2 tbsp cooking oil
Instructions
- If you bought cleaned intestines, it’s advised to clean them again yourself for safety reasons.
- Clean the intestines lightly to squeeze out any remaining waste and use a pair of scissors to cut them open and clean them under some running water.
- Slice the pork intestines horizontally into 1-inch/2.5cm long pieces, and the chicken intestines into 6-inch/15cm long pieces. Coil the intestines onto skewers, adding about 3 to 4 pieces to each stick.
- In a big pot, boil water with salt, peppercorns, and bay leaves. Once the water is boiling, place the skewered intestines into the pot and cook over a low flame for a few minutes.
- When the heat is low, add the vinegar and simmer the meat for approximately half an hour or until it is soft and tender. After this, turn off the heat and let the meat cool.
- Mix the soy sauce, cooking oil, and ketchup to make the grilling sauce.
- Grill the intestines, brushing them with the prepared sauce, for approximately 5-10 minutes, or until they turn reddish-brown.
- Once the barbecue is done, serve it with some soy sauce or a spiced vinegar dip.

Other Notes on Filipino Intestines Barbeque Recipe
Isaw is one of the many types of barbeque you can try in Filipino cuisine, but more than this, there are different ways to eat it. A classic isaw is boiled and grilled, but you also have the option to have it fried. This is usually done by having the isaw dipped in an egg mix and deep frying it. In addition to having an additional texture, crispy isaw features another layer of flavor that makes it different from grilled isaw.
