Embutido Recipe (Filipino Meatloaf Recipe)

Embutido Recipe – Otherwise known as embotido, embutido is a type of steamed meatloaf. It is made with ground pork and stuffed with hard-boiled eggs and sliced ham or various sausages. It is a common Filipino Christmas dish but can also be seen in fiestas and other events. While the dish is usually steamed, it can also be baked. You can also serve this dish hot or chilled, with banana ketchup or some other type of sweet sauce for dipping.

In addition to the meats and hardboiled eggs, a unique addition to this meatloaf is raisins. There are also other ingredients you can add to the mixture, including sweet pickle relish, cheese, pineapple chunks, and sliced pimiento or bell peppers. The important thing is that this dish is cooked in aluminum foil. Once cooked, it is usually sliced while hot. But it is more usual to chill it so that it is less likely to disintegrate when slicing. Ingredients

  • 2 lbs. ground pork
  • 12 pieces vienna sausage or 6 pcs hotdogs cut in half lengthwise
  • 3 hard boiled eggs sliced
  • 1/2 cup sweet pickle relish
  • 1/2 cup tomato sauce
  • 2 raw eggs
  • 2 cups cheddar cheese grated
  • 1 cup red bell pepper minced
  • 1 cup green bell pepper minced
  • 1 1/2 cup raisins
  • 1 cup carrots minced
  • 1 cup onion minced
  • salt and pepper
  • 1 to 1 1/2 cups bread crumbs made by placing 4 slices of tasty bread in a food processor. If not using any food processor just tear the bread.

Instructions
 

  • Place the ground pork in a large container
  • Add the bread crumbs then break the raw eggs and add it in. Mix well
  • Put-in the carrots, bell pepper (red and green), onion, pickle relish, and cheddar cheese. Mix thoroughly
  • Add the raisins, tomato sauce, salt, and pepper then mix well.
  • Place the meat mixture in an aluminum foil and flatten it. (see video for guidance)
  • Put in the sliced vienna sausage and sliced boiled eggs alternately on the middle of the flat meat mixture.
  • Roll the foil to form a cylinder — locking the sausage and egg in the middle if the meat mixture. Once done, lock the edges of the foil.
  • Place in a steamer and let cook for 1 hour.
  • Place inside the refrigerator until temperature turns cold

Embutido originates from the American meatloaf, introduced during the American colonial period in the Philippines. What makes it different from American meatloaf is that it is usually steamed, although it can be baked. It is also made with ground pork rather than ground beef. Another variation of this dish is morcón. It is a beef roulade stuffed with eggs, ham, sausages, and pickled cucumber. It is cooked by frying and stewing, rather than steaming or baking.
